دراسة مغربية تكشف أصنافا من الفول بخصائص واعدة للصناعات الغذائية
A Moroccan scientific study found promising properties in proteins extracted from eight varieties of faba beans grown in Morocco. Analyses showed that some of these varieties can retain water and oil and can form foam and emulsions. The study says these properties offer potential for developing plant-based ingredients used in food industries. It points especially to bakery products, beverages and plant-based meat alternatives. The findings were published in a scientific research paper.
