Each Pchum Ben season, large numbers of Cambodians wrap ansom, the sticky rice cakes offered up at the temples. Families prepare different versions, from the pork-filled ansom chrouk to the banana-wrapped ansom chek, along with smaller cakes such as num bot and num korm. For most citizens the wrapping is described as a tradition that cannot be skipped. The practice holds strongest in the countryside, where households still make the cakes at home. In cities and crowded urban centers the custom has thinned out. Town dwellers are more likely to buy the cakes ready-made than to spend hours steaming them themselves. The report frames the shift as a quiet change in how the festival is observed between village and city.
